Q: Charlotte Bakery is named after family. Why bring a traditional British Sponge cake to Thailand? Why not just do what everyone else is doing?

Dan: “I wrote a blog on the story behind our bakery Read: The Charlotte Bakery Story Here, but simply put: I’m just not a fan of the way most places make cakes here.

Many local bakeries lack substance and technique. They often use cheap oils and stabilizers to make the cake ‘fluffy,’ but that massively impacts the quality and ultimately the flavor. It feels like eating sweetened air.

I was brought up in a family of bakers—my Mum, Sue, and my Grandma, Amy. I had the skills and the 1940s recipes. It was the most logical move to bring that ‘real’ texture to Bangkok. Our philosophy is: Give the people what they don’t know they want… Yet!

Dan: “This is a great question, and one we struggled with at the start. While the feedback was always positive from locals and expats, we did get the ‘Wan Mak’ (Very Sweet) comment a few times from Thai customers.

We listened. We adjusted the recipes accordingly to balance the sugar with the richness of the butter. We now feel we have the perfect balance. However, for those who are strictly health-conscious, we can also offer ‘Less Sweet’ versions on request.”
